Although the truck has had its appearance changed to match the aesthetic or the time period of a film before, this makes the first time it has appeared as another type of vehicle. We had heard through the grapevine as well as reliable sources that the truck would in fact not appear as a truck.
The truck appears as a Piaggio Ape and was spotted by Pixar Post forum user Smartknow along with several other Easter Eggs
During the race near the end of the film the Pizza Planet Ape can be spotted as Ercole speeds through the streets.
Now the question remains, how quickly can we have a Piaggio Ape shipped to Southern California? ;)
